There are so many uses for not just mason jars, but their lids and rims, too. They are practical for a multitude of things, and today that thing was baking muffins.
Using regular size mason jar rims, I set to work baking muffins without a muffin tin.
While you only need the rims for this particular recipe, I chose to buy the lid/rim combo so I will have lids at a later time when I can jam or do a craft.
After opening the box, I separated the lids and rims. Next, I put the rims with the bottom side facing up on a cookie sheet, creating three rows of rims, each with four rims.
I then placed two paper baking cups in each rim. While it isn’t necessary to use two, I decided to as I thought it would give the muffins extra support on the sides.
Next, I mixed the ingredients together and tried to refrain from eating the delicious batter straight out of the bowl!
Upon completion of mixing the batter, I spooned it into each of the twelve paper baking cups, topped it with sweet sugar, and then it was ready to go in the oven.
In the next 24 minutes, my house started smelling delicious as the aroma of muffins spread throughout!
Finally, it was time to take them out. My glorious muffins were ready.
Perfection! They turned out wonderful. My HH (Handsome Husband) and I will now be enjoying these delicious muffins for the next few days. And that my friends is how you make muffins using mason jar rims.
